Whilst studying at Cornwall College, I had the amazing opportunity to work with Nathan Outlaw. During my time there I gained a lot of skills and knowledge, that has prepared me for my career. Once I finished college, I continued working at Nathan’s restaurant until another opportunity came along.
I began working in a restaurant slightly closer to home, which happened to be this very hotel. Whilst at The Llawnroc I worked my way through to become Head Chef. I stayed here for two years, which is where I met my future wife.
I was young, and at 22 still had much to learn. I returned to work with Nathan Outlaw as his Sous Chef, and after a year I took over as Head Chef at his Port Isaac restaurant; which later won a Michelin star.
Now a wife and three children later, I have returned The Llawnroc Hotel. I have designed a menu around using fresh, local ingredients.
