Meet Andrew Collins – Our Head Chef

I was brought up in Falmouth, and throughout my school life, I always knew that I wanted to be a chef. Catering runs through my family, my grandad was a baker in his younger day, and my uncle is a fantastic chef who now has his own restaurant in Falmouth. So catering is in our blood.

I started my career as soon as I left school at the Falmouth Beach hotel as a commis chef. I was there for 8 months before moving on just down the road at the Falmouth hotel, starting as a commis chef, and working my way up the ranks.

I then moved away to the amazing island of Guernsey, and worked at the 4 star St. Pierre Park Hotel. I then got my first head chef job at the age of 26 in a hotel in Thame Oxfordshire, and had a team of 5 chefs. Thame is where I met my wife, who also worked at the hotel. After  four years working here, we wanted to move back to Cornwall with our two young boys.
